Heather’s Pumpkin Pizza Recipe

Disclaimer: I’m not the person to give you a recipe with exact measurements. I like to cook things with a dash of this and a few spoonfuls of that. I know which flavors I like so I tend to just simply combine flavors of ingredients I like 🙂

Hence, my recipe for Pumpkin Pizza! Many years ago I had a Pumpkin Pizza at a restaurant and I loved it so much I figured I’d try my own version/copy.

Things you will need:
15oz 100% Pure Pumpkin in a can
Nutmeg
Brown Sugar
Pumpkin spice
Jellied fig
Bread (sliced Italian bread or pre-made flat pizza bread)
Mozzarella Cheese
Mascarpone Cheese

Step 1:
Combine Pumpkin, Brown Sugar, Pumpkin Spice, and Nutmeg so that the pumpkin turns an orange-brown color
(Again, this is per your preference, but for a 15oz can of pumpkin I used 2 heaping tablespoons of brown sugar and 1 tsp each of nutmeg and pumpkin spice)
This is your sauce.

Step 2:
Spread sauce it as thickly as you want on the bread using a spoon.

Step 3:
Cover slices with shredded mozzarella cheese and then spoon out dollops of mascarpone and jellied fig all over the top.

Step 4:
Cook at 350 for 20 minutes until cheese is bubbling/melted.

Notes:
If you use pre-made pizza dough, you don’t have to prep the dough.
If you use Italian bread, slice it thick and maybe even saute it ahead of time in garlic and olive oil.
(I tried both and both are great)

You could also use Pillsbury pizza dough but you want it to be strong enough to support the pumpkin and cheese on top.
Let me know if you made it and any variations you made…
